Mediterranean Delight: Tzatziki Chicken Salad
Ingredients
For the Chicken Salad:
- 2 large chicken breasts, cooked and shredded
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, sliced
- 1/4 cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, grated and excess water squeezed out
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- Salt and pepper, to taste
Instructions
Prepare the Tzatziki Sauce:
In a medium-sized bowl, combine the Greek yogurt, grated cucumber, minced garlic, lemon juice, olive oil, and fresh dill.
Mix well until all ingredients are fully incorporated.
Season with salt and pepper to taste. If you'd like a stronger garlic flavor, add a bit more minced garlic. Set aside in the fridge while you prepare the salad.
Make the Chicken Salad:
4. In a large mixing bowl, combine the shredded chicken, diced cucumber, sliced red onion, halved cherry tomatoes, Kalamata olives, and crumbled feta cheese.
