Milano Cookies Recipe
These homemade Milano cookies are the perfect balance of delicate, buttery cookies with a smooth chocolate filling. Inspired by the famous Pepperidge Farm treat, these cookies are simple to make and are perfect for tea time, gift-giving, or a sweet indulgence.
Ingredients
For the Cookies:
- 1 cup (2 sticks) unsalted butter, softened
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
For the Chocolate Filling:
- 4 oz semi-sweet or bittersweet chocolate, chopped
- 2 tablespoons unsalted butter
- 2 tablespoons heavy cream
- 1/2 teaspoon vanilla extract
Instructions
Prepare the Cookies:
Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
Add the egg and vanilla extract and mix until combined.
In a separate bowl, sift together the flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
Shape the Dough:
Roll the dough into a log about 1-inch thick. Wrap the dough log in plastic wrap and refrigerate for 30-60 minutes to firm up.
Once chilled, slice the dough into thin rounds, about 1/8-inch thick. Place them on the prepared baking sheets, spacing them about 1 inch apart.
Bake the Cookies:
Bake the cookies in the preheated oven for 8-10 minutes, or until the edges just begin to turn golden. Be careful not to over-bake them as they should remain pale.
Allow the cookies to cool completely on a wire rack.
Prepare the Chocolate Filling:
While the cookies are cooling, melt the chopped chocolate and butter together in a heatproof bowl over a double boiler or in the microwave (in 30-second intervals, stirring in between).
Once melted, stir in the heavy cream and vanilla extract until smooth and creamy.
Assemble the Milano Cookies:
Once the cookies are fully cooled, spread a generous layer of the chocolate filling on the flat side of one cookie. Top with another cookie, flat side down, to create a sandwich.
Repeat this process until all cookies are filled.
