CHOCOLATE CHIP YOGURT BISCUITS
INGREDIENTS
• 2 cups all-purpose flour
• 1/4 cup granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, cold and cubed
• 1 cup Greek yogurt
• 1/2 cup chocolate chips
• 1 teaspoon vanilla extract
• 1 egg, for egg wash
• 1 tablespoon milk, for egg wash
INSTRUCTIONS
● Preheat your oven to 425°F (220°C).
Line a baking sheet with parchment paper.
● In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
● Add the cold, cubed butter to the dry ingredients.
Use a pastry cutter or your fingertips to work the butter into the dry mixture until it resembles coarse crumbs.
● Stir in the Greek yogurt, chocolate chips, and vanilla extract until a dough forms.
● Turn the dough out onto a lightly floured surface and knead it gently a few times until it comes together.
● Roll the dough to about 1-inch (2.5 cm) thickness and use a round biscuit cutter to cut out biscuits. Place them on the prepared baking sheet, leaving a little space between each one.
● In a small bowl, whisk together the egg and milk to create an egg wash.
Brush the tops of the biscuits with the egg wash.
● Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown and cooked through.
● Remove from the oven and let them cool slightly on a wire rack.
