Raisin Scones Recipe
Ingredients:
• 2 cups all-purpose flour
• 1/4 cup granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, cold and cubed
• 1/2 cup raisins
• 2/3 cup milk
• 1 egg plus 1 egg yolk
• 1 teaspoon vanilla extract
Instructions:
• Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
• In a large mixing bowl, combine the flour, sugar, baking powder, salt.
• Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.
• Stir in the raisins until evenly distributed.
• In a separate bowl, mix together the milk, egg and vanilla extract.
• Gradually pour the milk mixture into the dry ingredients, stirring until a soft dough forms.
• Turn the dough out onto a lightly floured surface and gently knead it a few times until it comes together.
• Pat the dough into a circle about 1 inch thick. Use a sharp knife to cut into circles. Then brush the egg yolk on top
• Place the scones on the prepared baking sheet, leaving some space between each one.
• Bake in the preheated oven for 15-18 minutes, or until the scones are lightly golden brown on top.
• Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
• Serve warm with butter or clotted cream and your favorite tea or coffee. Enjoy!
